Butter Biscuits

Delicious Butter Biscuits Ingredients: 1/2 cup butter (1 stick); room temperature  4 tsp sugar 2 tsp salt 3 cups of flour 4 tsp baking powder 1 1/3 cups milk Instructions Preheat oven to 450 degrees. Add flour and butter into the mixer and mix until butter is pea size. Add the sugar, salt, baking powder and mix until combined.  Last, add milk to the flour mixture and mix until combined. If the dough is a little sticky, add an extra Tbsp of flour to the dough. Next, generously flour the surface you will be rolling dough out on. Roll out the dough until it is around a half inch thick and fold the dough over itself in half and roll out again. Repeat until you have folded the dough back onto itself at least 6 times.  Even if it seems thin, it will rise. After it has been rolled out multiple times, use a biscuit cutter or a cup about the size you want your biscuits to be. (I actually use a kids IKEA cup) Pu

Chicken Chow Mein

Chicken Chow Mein This is one of our favorites. I honestly like it better than take out! INGREDIENTS: 3 large chicken breasts 3 heads of broccoli 2 cups of shredded carrots 2 cups shredded green cabbage 1 large onion, thinly sliced 1 Bok Choy cabbage, thinly sliced 3 cloves of  garlic, minced 2 Tbsp butter olive oil sesame oil 6 cups of chicken stock 4 Tbsp soy sauce 6 Tbsp corn starch 1 bag of dry chow mein noodles DIRECTIONS Thinly slice up chicken. I like to cut the breast in half and thinly slice it that way. In a large pot or wok, circle the pan with sesame and olive oil. Heat up on medium high heat. Add the chicken, salt and pepper a little and saute until completely cooked through.  While the chicken is cooking you can start to cut up the vegetables. I use shredded carrots, but you can chop your own. Whatever is easiest. If you have never used Bok Choy, don't worry, it is easy to work with. Cut the root end off

Cheese Ball

Cheese Ball This is one of the easiest, but most delicious cheese balls you have tasted. This has always been a Christmas staple, but have recently used it for any pot luck or get together. Give it a try!! INGREDIENTS: 3 packages of cream cheese 3 packages of thin meat beef, chopped into small pieces 1 bunch of green onions, chopped 3 Tbsp of Accent seasoning 2 Tbsp Worcestershire sauce 2 Tbsp milk Directions Add cream cheese to a large mixing bowl. Chop up the thin beef and the onion and add to the bowl. Add the remaining ingredients and mix. For best results, use your hands to mix thoroughly.  Shape into a ball. Refrigerate for an hour to set. Serve with your favorite crackers. We like triscuts and wheat thins! 

Crispy Chicken Nuggets with Honey Mustard Sauce

Crispy Chicken Nuggets These nuggets are lightly breaded, but very crispy on the outside, but juicy and delicious on the outside. They are extremely easy to make and fry, and they will be a family favorite. I know they are in our house!! INGREDIENTS: 5 large chicken breasts, cubed 1 1/2 tsp salt 1 tsp black pepper 1 Tbsp baking powder 1 egg 3 Tbsp corn starch 1/2 cup of flour Canola oil for frying Cube up the chicken up into nuggets size pieces and put into a bigger size mixing bowl. Add to the chicken the salt, pepper and baking powder and stir chicken around. Add egg and cornstarch and stir again to coat. Add the flour and stir chicken until it is evenly coated. Heat up the oil in a deep fryer or a deep skillet pan until a drop of water dripped in sizzles. Start adding chicken to the oil and fry until they all start to float, and flip them around. Keto Friendly Lasgana

Keto Friendly Lasagna This is really yummy, and the homemade "noodles" are perfect if you are watching your carb intake. You can also use the noodle recipe for other recipes like pizza dough. INGREDIENTS: 2 pounds of ground beef 1 pound of ground sausage 1 onion, diced 3 cloves of minced garlic 2 tsp of salt 1 tsp of pepper 1/4 cup minced basil 3 cups of shredded Italian cheese blend 2 16 oz containers of cottage cheese 2 eggs Sugar free Pasta Sauce "NOODLE" INGREDIENTS 2 cups of shredded mozzarella cheese 3 Tbsp of cream cheese 1 cup of coconut flour 2 eggs 1 clove of garlic minced or pressed  1/2 tsp salt INSTRUCTIONS Pre heat the oven to 425 degrees. Add ground beef, sausage, diced onion, salt and pepper together in large skillet. Cook until all browned and cooked together. Add garlic and basil and cook for 1 minute. Drain meat into a colander to drain the grease. Add pasta sauce and stir to combine

Lasagna

LASAGNA Lasagna is one of our kids favorite meals. We get asked to make it at least twice a month!! After many years, I have come up with this recipe and perfected it. So, here it is. INGREDIENTS: 2 pounds of ground beef 1 pound of ground sausage 1 onion, diced 3 cloves of minced garlic 2 tsp of salt 1 tsp of pepper 1/4 cup minced basil 3 cups of shredded Italian cheese blend 2 16 oz containers of cottage cheese 2 eggs lasagna noodles (whatever type you like) Pasta Sauce, I use garlic and herb but whatever you like. INSTRUCTIONS Pre heat the oven to 400 degrees. Add ground beef, sausage, diced onion, salt and pepper together in large skillet. Cook until all browned and cooked together. Add garlic and basil and cook for 1 minute. Drain meat into a colander to drain the grease. Add pasta sauce and stir to combine. In a separate bowl, combine cottage cheese, 2 cups of the Italian cheese and the 2 eggs, and stir to combine.

The Best Garlic Bread You Have Ever Had

The Best Garlic Bread EVER! Garlic bread is one of the best sides for so many dishes.  Our kids absolutely love it and really expect it when we make Lasagna or Spaghetti. This recipe is not only really simple, but absolutely delicious. INGREDIENTS: 1 loaf of french bread 1 stick of butter at room temperature 2 larger cloves of garlic Salad supreme Put softened butter into a mug.  Mince garlic, I actually use a garlic press. It makes it a little easier. add the garlic into the butter and mix it up really well. Let it sit for an hour before spreading. Cut the loaf of french bread in half and put it onto a cookie sheet. Spread the garlic butter onto the bread. Something that makes this truly special id the salad supreme. Sprinkle salad supreme all over the bread. Put bread into the over and set the oven to broil. Keep an eye on it because it just needs t melt the butter and crisp up the bread which happens rather quickly. Serve hot!

Sweet Island Chicken

SWEET ISLAND CHICKEN This chicken dish is one of our go to meals. It is really easy, and so delicious. Plus, the kids LOVE it!  Ingredients: 4 small chicken breasts or 2 large breasts cut in half 1 16 oz bottle of Russian salad dressing 1 20 oz can of pineapple chunks, drained 1 pkg of dry onion soup mix 3/4 of a 32 oz. jar of apricot pineapple preserves 1 tsp salt 1 tsp garlic powder 1/2 tsp pepper DIRECTIONS: Preheat oven to 350 degrees.  Mix Russian dressing, onion soup mix, preserves together in a mixing bowl. Add drained pineapple chunks. Add seasonings and stir until completely combined. Trim chicken, and if using large breasts, cut them in half and put into 9 x 13 baking dish.  Pour the combined sauce over the chicken.   Cover a cookie sheet in tinfoil and put it on bottom oven rack with chicken dish on top rack to bake. Sometimes it can bubble over a little and it will help just in case t
