This is really yummy, and the homemade "noodles" are perfect if you are watching your carb intake. You can also use the noodle recipe for other recipes like pizza dough.
INGREDIENTS:
- 2 pounds of ground beef
- 1 pound of ground sausage
- 1 onion, diced
- 3 cloves of minced garlic
- 2 tsp of salt
- 1 tsp of pepper
- 1/4 cup minced basil
- 3 cups of shredded Italian cheese blend
- 2 16 oz containers of cottage cheese
- 2 eggs
- Sugar free Pasta Sauce
"NOODLE" INGREDIENTS
- 2 cups of shredded mozzarella cheese
- 3 Tbsp of cream cheese
- 1 cup of coconut flour
- 2 eggs
- 1 clove of garlic minced or pressed
- 1/2 tsp salt
INSTRUCTIONS
Pre heat the oven to 425 degrees. Add ground beef, sausage, diced onion, salt and pepper together in large skillet. Cook until all browned and cooked together. Add garlic and basil and cook for 1 minute. Drain meat into a colander to drain the grease.
Add pasta sauce and stir to combine.
In a separate bowl, combine cottage cheese, 2 cups of the Italian cheese and the 2 eggs, and stir to combine.
In a 9 x 13 deep baking dish, spread a little of the meat sauce on the bottom of the pan. You need sauce on the bottom so the noodles don't stick.
NOODLE INSTRUCTIONS
In a microwave safe bowl, combine mozzarella cheese, cream cheese and coconut flour. Microwave for 1 minute and stir. Microwave for 30 more seconds and stir. Add eggs, garlic and salt stir and form into a dough. Between 2 pieces of parchment paper, roll the dough out thin!
Put the rolled out dough onto a cookie sheet on the bottom parchment paper sheet, or if you only have wax paper to roll it on, oil the cookie sheet with olive oil before putting the rolled dough on. Bake in 425 degree oven for 12 minutes.
Once it is out of the oven, cut it into strips like lasagna noodles and start assembling the dish in a deep 9 x 13 pan. I go in the order of sauce, noodles, cheese mixture and then more sauce.
Lower oven temperature to 400 degrees and bake for 35 minutes. At the 25 minute mark, add the rest of the cheese and bake the last 10 minutes to melt the cheese. Let it rest for 10 minutes so that it doesn't fall apart.
