Lasagna



LASAGNA


Lasagna is one of our kids favorite meals. We get asked to make it at least twice a month!! After many years, I have come up with this recipe and perfected it. So, here it is.

INGREDIENTS:

  • 2 pounds of ground beef
  • 1 pound of ground sausage
  • 1 onion, diced
  • 3 cloves of minced garlic
  • 2 tsp of salt
  • 1 tsp of pepper
  • 1/4 cup minced basil
  • 3 cups of shredded Italian cheese blend
  • 2 16 oz containers of cottage cheese
  • 2 eggs
  • lasagna noodles (whatever type you like)
  • Pasta Sauce, I use garlic and herb but whatever you like.



INSTRUCTIONS

Pre heat the oven to 400 degrees. Add ground beef, sausage, diced onion, salt and pepper together in large skillet. Cook until all browned and cooked together. Add garlic and basil and cook for 1 minute. Drain meat into a colander to drain the grease.


Add pasta sauce and stir to combine.



In a separate bowl, combine cottage cheese, 2 cups of the Italian cheese and the 2 eggs, and stir to combine.





In a 9 x 13 deep baking dish, spread a little of the meat sauce on the bottom of the pan. You need sauce on the bottom so the noodles don't stick, plus I don't pre-cook the noodles. I let them cook in the sauce.


Then start the layering. I go in the order of sauce, noodles, cheese mixture and then more sauce.





This will go up 3 layers with sauce being the top level. Put in the oven and bake for 1 hour. When there is 10 minutes left, add the remaining cheese to the top of the lasagna and bake for the last 10 minutes. When it is done, left it rest for 10 minutes before cutting so  it doesn't fall apart. We always serve it with a side of garlic bread!

Vegetable Egg Foo Yung

Egg Foo Yung is one of my favorite Asian dishes. Plus it is very low carb! This is my variation on this yummy dish! Veggie Egg Foo Yung Ingredients: 2 cups of chopped broccoli 1 cup fresh or frozen peas 2 cloves of minced garlic 1 cup of diced onion 1 cup diced or shredded carrots 6 eggs 1 Tbsp +1 tsp soy sauce 2 Tbsp butter Olive oil Sesame oil Gravy: 2 cups of beef stock 2 tsp garlic powder 1 tsp onion powder 1 Tbsp soy sauce 1/4 cup of cold water 3 Tbsp cornstarch salt and pepper to taste INSTRUCTIONS: Chop up the vegetables. Butter Biscuits

Delicious Butter Biscuits Ingredients: 1/2 cup butter (1 stick); room temperature  4 tsp sugar 2 tsp salt 3 cups of flour 4 tsp baking powder 1 1/3 cups milk Instructions Preheat oven to 450 degrees. Add flour and butter into the mixer and mix until butter is pea size. Add the sugar, salt, baking powder and mix until combined.  Last, add milk to the flour mixture and mix until combined. If the dough is a little sticky, add an extra Tbsp of flour to the dough. Next, generously flour the surface you will be rolling dough out on. Roll out the dough until it is around a half inch thick and fold the dough over itself in half and roll out again. Repeat until you have folded the dough back onto itself at least 6 times.  Even if it seems thin, it will rise. After it has been rolled out multiple times, use a biscuit cutter or a cup about the size you want your biscuits to be. (I actually use a kids IKEA ...
