Cranberry Glazed Meatballs


Homemade Meatballs with Cranberry Chili Sauce!

Meatballs

3 lbs Ground beef
2 Tbsp Salt
2 tsp Ground Black Pepper
2 Eggs
1 Small Onion 
3 Cloves Garlic
2 Slices of Bread 
1/2 Cup Milk
1/4 Cup Parmesan Cheese

Cranberry Glaze Sauce

2 Cans Whole Berry Jellied Cranberries
2 Bottles Chili Sauce
1/2 cup Brown Sugar
2 Tbsp Lemon Juice
2 Tbsp Worcestershire Sauce
Green Onions for Garnish


INSTRUCTIONS

Preheat oven to 400 degrees. Line baking sheet with tinfoil. Put Ground Beef in a big enough bowl to mix ingredients in. Add salt, pepper, eggs and Parmesan into bowl. In a blender, puree onion and garlic together and add to the meat mixture. In separate bowl, tear up bread and add the milk to it. Wait until it is totally soggy (about a minute) then squeeze the milk out of the bread (I use my hands) and add it to the bowl. Mix the meat and ingredients together with hands until everything is really combined. Form the meat mix into balls, I do around the size of a ping pong ball. Put onto baking sheet. I usually add a metal cooling rack on top of the pan to bake them, to strain the oil down. Bake for 40 minutes. When they are done, add them to a crock pot.

Sauce Instructions

Add all ingredients into sauce pan and bring to a boil, stirring constantly. Once it is all incorporated, pour over the meatballs and gently stir to coat. 

These will be a HIT at your next pot luck!

Chicken Chow Mein

Chicken Chow Mein This is one of our favorites. I honestly like it better than take out! INGREDIENTS: 3 large chicken breasts 3 heads of broccoli 2 cups of shredded carrots 2 cups shredded green cabbage 1 large onion, thinly sliced 1 Bok Choy cabbage, thinly sliced 3 cloves of  garlic, minced 2 Tbsp butter olive oil sesame oil 6 cups of chicken stock 4 Tbsp soy sauce 6 Tbsp corn starch 1 bag of dry chow mein noodles DIRECTIONS Thinly slice up chicken. I like to cut the breast in half and thinly slice it that way. In a large pot or wok, circle the pan with sesame and olive oil. Heat up on medium high heat. Add the chicken, salt and pepper a little and saute until completely cooked through.  While the chicken is cooking you can start to cut up the vegetables.
